Should DMA be turned off when one flashes their drive with a new firmware or is it better to leave DMA on when flashing ?

If you have DMA on and the flash fails you can try it again with DMA off.
The same with DMA off and the flash fails you can try it again with DMA on.

If you are flashing from Windows it might be better to disable DMA. Best for you is to check it up in the drive's manufacturer site.

When flashing from true DOS you don't have to worry about it at all.
IMHO it is by far the safest option to flash anything, because Windows is much more likely to crash on you when you least want it to.
