I am doing something similar...
I recently bought the gangs of new york on dvd. its 2 disks. When you play disk 1 it plays the first half of the movie and then asks you to put in disk 2. I want to make it so i can backup my dvd ( possibly with special features) using only one disk.
I would also like to hear more on the use of dvd2one's join method in using this. I usally use dvd decrypter and dvd2one, but have shrinkdvd as well. Could someone plaese walk me through the steps in making these two disks becoming one?
any input is appreciated...

Well, truth is, you are not "really" joining the two discs.... What is occuring is that you are putting "two" movie titles on one disc, and this is normal for the slight delay. Other than the delay, you should notice nothing different.

Just so you know, menus (and other special features) will be virtually impossible to mantain.
