Do all of the DVD Copying software untilities out there rip to the HD and then burn to the writer from there?

Do any copy like a CD: DVD-ROM --->DVD-R?

Since there is Macrovision protection, you'll need a utility such as DVD Decrypter that can remove it while ripping it to the HD.

So I would suggest DVD Decrypter for rip, DVD Shrink for compress and Nero for burn.

I'm looking at:

DVD Cloner II
DVD Wizard Pro
1 Click DVD Copy

Probably many, but this is the safest, better and most recommented way.

Here is a simple guide for them.

DVD Decrypter
DVD Shrink

Simple, and Good

So DVD Decrypter is better for ripping because of it's ability to read poorly kept discs and DVD Shrink is better for compression because it allows you to "edit" what you want to keep/get rid of?

Yeap!

DVD Shrink can also rip just like as DVD Decrypter but sometimes have difficulties while DVD Decrypter never.

And the most important thing for those is that both are FREEWARE!!!

If copying to a DL disc, can one use DVD Decrypter to rip, then go directly to Nero to burn?

Yes, but better rip to ISO format and burn it using DVD Decrypter or CopyToDVD.

You've been much help so far as has everyone else, so forgive the dumb question but: how do I choose to rip to ISO format in DVD Decrypter?
