I'm considering buying the Nero 7 package but wondered does it copy DVDs REGARDLESS of the protection or would I still need DVDFab Decrypter on occassion?

Nero does not and probably never will defeat the copy protection on DVD movie discs.

you still need AnyDVD, DVD Decrypter or other similar software to bypass CSS protection

... but once I have those directories,  "Video_TS" and all that, Nero will make an ISO and burn, yes?

Yes, Nero will, but ImgBurn does a better job IMHO.
